The tale of the tea known as Missing Piece is almost too short to tell.
However, I have made a habit of these tea introduction posts, and it would feel wrong to leave one out.
The need for Missing Piece was an outgrowth of my desire to make a decaffeinated version of as many of my teas as I can.
It took me a bit longer than I like to realize that anything using genmaicha fell into that category – as long as I was willing to create a decaffeinated one to match the caffeinated that I use as closely as possible.
It took the testing of a handful of decaffeinated green teas to find one that I thought was within range and some tinkering with ratios to get the rice to tea to an appropriate balance.
From that point, the name was relatively easy and rather self-explanatory.
